Inulin is a mixture of oligoners and polymers of β-(2-1)-fructose derived from natural sources including vegetables fruits Jerusalem Artichoke Turber (Hellanthus tuberosus L) and Chicory roots.
Inulin is classified as " Non-digestible" and low-caloric carbohydrate used in nutrition as a source of dietary fibers. It stimulates the growth of healthy intestinal bacterial whitch support good colon and intestinal health. Reserch has shown that inulin-type fructans and corresponding fermentation products reduce the risks of colon cancer. It could be used to replace fat and sugars for a wide range of application in foods. Inulin dose not affect blood sugar levels. its taste is comparable to sugar (lower sweetness) and it would be an ideal ingredient as a sugar replacement for certain food preparations.
Inulin is a polysaccharide, and it has one-third to one-fourth less food energy than that of sugar and a sixth to a ninth less energy than fat.
